A premium Extra Virgin Olive Oil produced in the mountainous area of Zahare de la Sierra in Spain. Oleum Viride is specially blended from the first cold press of locally grown olives for a medium fruity, slightly nutty, bitter flavour with delicious notes of apple and fresh tomato. The local olive varieties Manzanilla of Zahara and Lechin are pressed within six hours of harvesting to capture their distinctive freshness and blended for a balanced flavour. Pressing takes less than 24 hours at temperatures under 25oC for a high quality oil. This unique Extra Virgin Olive Oil adds character to any dish and is delicious used raw in salads or drizzled over grilled food, or cooked as a base for sauces, stews and frying.
