Fig Balsamico is created from a blend of reduced fermented grape juice and aged balsamic vinegar by chef Rick Pott at Imaginative Cuisine. The finest Lambrusco and Trebbiano grapes are selected in Modena, Italy and their juice is reduced and fermented in Oak, Juniper and Cherry wood barrels before being blended with a traditional aged balsamic vinegar, and packaged in a convenient squeezable bottle. This unique product gives excellent results in recipes calling for a balsamic vinegar reduction, adding a rich velvety sweet and sour note with a hint of fig. Use with oil as a delicious dip or dressing for salads or cured meats or try with berries and ice cream for a flavour sensation.
