This versatile Balsamic vinegar from Modena is produced using traditional techniques. The musts (pulp left after pressing) of local grapes are mixed with wine vinegar and then aged in oak casks to mature and develop the distinctive sweet and sour Balsamic flavour. The Yellow Label version in this range is a great all rounder designed for everyday use in both cooking and as a dressing. It has a classic, slightly pungent flavour that is perfect in salad dressings or with olive oil as a dip, and is equally effective used in marinades or the seasoning of stews and sauces.
