Gold Label Traditional Balsamic Vinegar is made from grapes grown in Reggio Emilia. The grape must (pulp left after pressing) is carefully processed by heating, reducing, fermenting and aging in a succession of ancient wooden casks to enhance the fragrance and flavour of the vinegar. This is the most aromatic and flavourful vinegar produced by Il Borgo, aged for more than 25 years to achieve a deep, mellow flavour that adds a delicious elegance to both sweet and savoury dishes.
