Italian Pasta - from Stefano Sbiroli
Stefano Sbiroli is the driving force behind this Bari based pasta company started by his grandfather. It has always been their insistence to use only the best durum wheat grown in the area around Foggiano. The resulting pasta is of the highest quality with a pale colour and a matt texture ideal for holding sauces and flavours.
The production process begins with the mixing of the durum wheat semolina and water in a large, noisy steel press. Next the mixture is pressed and drawn through traditional bronze rings to produce the various shapes. The drying process requires patience, at a low temperature of 40-45C the short pasta takes 24 hours and the long pasta 36 hours to fully dry.

Italian Polenta and Rice
Principato di Lucedio
These products all bear the trademark Principato di Lucedio, this ensures that the rice is from the 1250 acre estate surrounding the Abbey of Lucedio (picture on left). Rice as been cultivated on these lands since the 15th century, when it was introduced by the monks. In 1937 the whole estate was purchased by Count Paolo Cavalli d'Olivola the father of Countess Rosetta who now owns and runs the estate. The rice is grown natually and packaged in a controlled atmosphere without using preservatives. This ensures that the rice remains fresh, full of flavour and retains high nutritional values.

Classic risotto rice from the north Italian region of Piedmont; a medium to long grian rice. Very absorbant of cooking liquid yet still retains a good bite in texture.

Another very high quality variety. Appreciated for its soft and light grain, which once cooked gives a more flowing risotto and softer rice salad.
Thai Profumato Rice 20 x 500g

Originated in Thailand. It has long grains, natural fragrance and delicate taste.

Basmati Rice 20 x 500g  
Risso Rosso 20 x 500g Natural pigmentation causes these grains to appear red. The colour is retained and a little enhanced when cooked.
Riso Nero Venere 20 x 500g A new variety of rice, obtained by crossing a Chinese black variety with Italian rice. Very fragrant and visual on the plate.

They specialize in producing traditonal Italian dishes in an easy to use style, which are totally free of preservatives and additives.
These risotto mixes are prepared using Carnaroli rice from Italy and combining it with a variety of different ingredients and herbs.
Following the instructions it takes aprox. 20 minutes to produce an excellent risotto to which you can add more ingredients if you choose to.

Each 300g bag will serve 4 - 5 as a starter / accompliment or 3 - 4 as a main dish.
