Kalamata table olives are totally different from the olives used to make oil. The olives are harvested in November when they are purplish black in colour and placed in brine for up to 8 weeks. This removes the bitterness from the fruit. A little oil is added to the solution to act as a barrier to the air.
Our olives are carefully selected by our supplier in Kalamata and we are confident of their quality.

Our green olives come from Amfisa an area of Greece noted for its green olives. The olives are prepared in the same way as the Kalamata olives but the marinade is a weaker solution of brine.
