Italy is the second largest producer of olive oil in the world and has led the way in labelling their oils classified as Protected Denomination of Origin (DOP) and Protected Geographical Indication (IGP). The mild summer temperatures and relatively high rainfall in late summer and autumn produce an extra-virgin olive oil which is characterized by a medium–light fruity, scarcely pungent, sweet flavour.
