Olis De Catalunya uses a traditional fermentation system called the 'Schützenbach' system to create a range of excellent quality vinegars.
The vinegars of Olis de Catalunya come from a cooperative located in Mollerusa (Lleida) in Spain which produces intensly aromatic vinegar using a trickling method, developed in 1823 by the German chemist Schutzenbach. The natural method of converting the wine to vinegar and six months ageing in French oak barrels results in
a uniquely smooth tasting product.
The fortress was a Templar House and has a wonderful history of being part of the castle line which defended the Erbo frontier. For Olis de Catalunya, the silhouette of the Castle of Gardeny, the distinctive range of high quality vinegars, symbolises the strength and dynasim of Lleida throughout history.
