Il Borgo
Il Borgo produces exceptional balsamic vinegar in the Emilia region of Italy.
For more than 40 years Il Borgo has created and bottled a range of fine balsamic vinegars using traditional techniques and local ingredients in the Emilia region of Italy. Emilia is an area famed for its cuisine which includes Parmigiano Reggiano cheese and salamis as well as the world renowned balsamic vinegar. This rich culinary tradition is reflected in the passion and seriousness Il Borgo show in relation to the production of their vinegar; protecting tradition whilst also embracing new technology and ideas is at the heart of what they do.
Il Borgo balsamic is made in the Emilia region where they are based as well as producing in the well known balsamic region of Modena. The balsamic vinegars are made exclusively from local grapes for a distinctive regional flavour. The unfermented grape 'must' (the remaining pulp after the grapes are pressed for wine) is concentrated by evaporation through cooking and then fermented twice before aging in a succession of wooden casks where it slowly matures for at least 12 years. It is then graded by expert tasters and rated for appearance, aroma and flavour before being classified as one of the three Il Borgo labels: orange, silver or gold.
Il Borgo is a family business, today run by two sisters who share a passion for protecting the traditions of the region, and producing these exceptional vinegars. The product range includes everything from the basic day-to-day, right through to the most exclusive luxury balsamic vinegar.
