Acetaia Reale
Acetaia Reale produces a premium range of Balsamic vinegar in Modena, Italy.
Acetaia Reale has been producing world famous Balsamic vinegars at their factory in Modena, Italy for four generations. The vinegar is processed traditionally in small wooden barrels specifically chosen for the stages of acetification (vinegar making), maturation and ageing.
The Reale factory is over a hundred years old with 2,000 barrels stored and managed in a well ventilated attic to achieve the traditional, authentic flavour. Specially cultivated Trebbiano and Lambrusco grapes are grown, handpicked and soft pressed in Modena to obtain a premium quality raw grape must. The musts are slow cooked for 36 to 48 hours until a concentration of 50% is achieved. The must then matures in a set of nine barrels arranged in decreasing capacities from 80l to 10l made from various woods including oak, chestnut, cherry, ash, mulberry and juniper, all chosen to add a unique flavour and aroma to the vinegar as it ages and matures. The barrels are stored and managed in the attic of the 19th Century farmhouse until a harmonious acid perfume and pleasantly intense bitter-sweet flavour is achieved in the final barrel in the set and bottling can take place. The final barrel is replenished from the eighth, the eighth from the seventh and so on until the first barrel that is topped up with freshly cooked grape must.
Acetaia Reale produces an impressive range of Balsamic vinegars from the basic and everyday to the most exclusive premium versions offering an elegant balance of aromas and sweet and sour flavours in a dark, syrupy vinegar. Mustard and jelly flavoured with the distinctive Balsamic vinegars have also been developed as sophisticated accompaniments for cold meats and cheeses.
